Make a delicious Italian sausage lasagna with fresh pasta sheets.
Ingredients:
  • 36.40 gm olive oil
  • 1 large brown onion, finely chopped
  • 2 anchovies in oil, drained, chopped (optional)
  • 2 garlic cloves, crushed
  • 600g Italian pork and fennel sausages
  • 125.00 gm dry white wine
  • 2 x 400g cans diced tomatoes
  • 375g packet fresh lasagne sheets
  • Shaved parmesan, to serve
  • Fresh basil leaves, to serve
Instructions:
  • Heat oil in a large frying pan over medium heat. Cook onion until softened, about 5 minutes. Stir in anchovies and garlic, cooking until fragrant for about 1 minute. Remove sausage from casings and add to pan, cooking until browned, around 10 minutes. Pour in wine, bring to a boil, and simmer until reduced by half, for 2 to 3 minutes.
  • Place the tomato in the pan and allow it to come to a boil. Lower the heat to a gentle simmer and cook for 10 to 15 minutes until the sauce slightly thickens.
  • Tear lasagne sheets into long strips and boil in salted water for 3 to 4 minutes until tender. Drain and return to the pan.
  • Drizzle sauce over pasta, add salt and pepper for seasoning, then mix well. Garnish with parmesan and basil before serving.
