Indulgent sausage, fennel, and tomato pasta - a delicious and simple comfort dish.
Ingredients:
  • 1 brown onion, thinly sliced
  • 1 medium fennel, thinly sliced
  • 4 Italian-style pork sausages, casings removed, broken into 1cm pieces
  • 700g Leggo’s Italian Herbs Passata
  • 375g pappardelle
  • Finely grated parmesan, to serve
  • Basil leaves, to serve
  • Garden salad, to serve
Instructions:
  • In a large frying pan over medium heat, heat the oil. Sauté the onion and fennel for 5 minutes until the onion softens. Then add the garlic and sausage, cook for 5 more minutes until the sausage is golden brown. Mix in the passata, reduce heat to low, and simmer for 10 minutes until the fennel is tender. Season to taste.
  • Cook the pasta in a large pot of boiling water according to package instructions until just tender. Drain thoroughly.
  • Serve the pasta in individual bowls, top with the sausage mixture, sprinkle with parmesan and basil, season to taste, and enjoy alongside a garden salad.
