Sausage ragu with parmesan mash

Indulge in savory sausage ragu paired with creamy parmesan mash for a delectable meal.
Ingredients:
  • 13.80 gm olive oil
  • 375g extra-lean Italian-style sausages
  • 1 brown onion, halved, thinly sliced
  • 127.50 gm vegetable liquid stock
  • 400g can crushed tomatoes
  • 40.00 ml chopped fresh basil leaves
  • 800g sebago potatoes, peeled, chopped
  • 84.98 gm milk
  • 40g butter
  • 82.50 ml grated parmesan cheese
  • Small basil leaves, to serve
Instructions:
  • In a large frying pan over medium heat, sizzle sausages in oil for 10 minutes until beautifully browned and fully cooked. Place on a paper towel-lined plate and slice into 3cm pieces.
  • Sauté onion and garlic until softened. Pour in stock and tomato, bring to a boil, then simmer with sausage and basil for 10 minutes until slightly thickened.
  • Boil potatoes in salted water until tender, then drain and mash in a pot. Stir in milk, butter, and Parmesan until smooth. Season with salt and pepper. Serve with sausage mixture and basil.
