Budget-friendly Italian sausage stew perfect for feeding large groups.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, halved, finely chopped
  • 2 garlic cloves, crushed
  • 40.00 ml finely chopped fresh sage
  • Pinch of dried chilli flakes
  • 1kg Italian sausages, skins removed, coarsely chopped
  • 1 x 800g can diced tomatoes
  • 125ml (1/2 cup) dry red wine
  • 40.00 ml coarsely chopped fresh continental parsley
  • Salt & freshly ground black pepper
  • Ciabatta or sourdough (optional), to serve
Instructions:
  • In a large saucepan over medium heat, sauté onion, garlic, sage, and chili in hot oil until onion is golden, about 10 minutes. Stir in sausage and cook until browned, about 5 minutes, stirring occasionally.
  • Combine the tomato and wine in the pot and bring to a boil. Reduce heat and simmer covered for 1 hour until sauce thickens. Remove from heat, stir in parsley, season with salt and pepper, and serve the sausage ragu in serving bowls with bread.
