Curtis Stone's comforting semi-dried tomato braised beef and potato stew - a satisfying crowd-pleaser.
Ingredients:
  • 382.50 gm Beef Stock
  • 60g semi-dried tomato
  • 2 cloves garlic, peeled
  • 500g Brand Beef Chuck Casserole Steak, cut into 2-3cm cubes
  • 1 small brown onion, roughly chopped
  • 1 stick celery, roughly chopped
  • 3 sprigs fresh rosemary
  • 600g Carisma Potatoes, cut into 2cm chunks
  • 125.00 gm water
  • 40.00 ml fresh parsley leaves
Instructions:
  • In a small saucepan, bring the stock to a simmer over high heat. Remove from heat and add the semi-dried tomatoes and garlic. Let sit for 30 minutes to soften before blending until smooth.
  • Heat a heavy saucepan over high heat until almost smoking. Add oil.
  • Generously season steak with salt and pepper, then sear until all sides are beautifully browned, approximately 7-10 minutes.
  • Sauté onion over medium-high heat until softened, about 4-5 minutes. Stir in celery and cook for an additional 3 minutes. Add rosemary and semi-dried tomato sauce, then cover. Enjoy the flavors developing!
  • Simmer meat for 45 minutes until tender. Add potatoes and 1/2 cup water, cover, and cook for 20 minutes until meat is fork-tender and potatoes are cooked through. Remove rosemary, season to taste, and divide into four serving bowls. Garnish with parsley before serving.
