Ingredients:
  • 450.00 gm self-raising flour
  • 80g butter, cubed
  • 342.48 gm milk
  • 200g feta cheese, crumbled
  • 270g jar semi-dried tomatoes, drained, chopped
  • 40.00 ml chopped fresh chives
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to a toasty 200°C and lay out 2 baking trays with parchment paper.
  • In a large bowl, gently sift flour and add butter. Using your fingertips, combine the butter with the flour until it forms a crumbly texture.
  • Create a well in the center and pour in milk. Stir with a flat-bladed knife until a soft dough forms. Transfer dough to a lightly floured surface and knead until smooth. Roll into a 1cm thick, 40cm x 28cm rectangle. Sprinkle cheese, tomatoes, chives, salt, and pepper over the dough. Roll up the dough lengthwise like a Swiss roll. Cut into 16 even rounds. Place them cut-side up on baking trays. Brush with egg wash. Bake for 15 to 20 minutes until golden and cooked. Cool on trays for 5 minutes before moving to a wire rack.
