Create a stress-free dinner using just a sandwich press.
Ingredients:
  • 8 flour tortillas
  • 50g baby spinach or baby rocket
  • 140g semi-dried tomato
  • 1 large avocado, thinly sliced (see note)
  • 1 large barbecued chicken, meat shredded (see note)
  • 120g cheddar cheese
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • Heat up a large sandwich press. Lay out 4 tortillas on a work surface. Pile each one with spinach, tomatoes, avocado, chicken, and cheese. Sprinkle with pepper. Top with the remaining tortillas to make sandwiches.
  • Toast the quesadillas in the sandwich press, two at a time, for 4 to 5 minutes until golden and heated through.
  • Slice the quesadillas in half and plate them with a dollop of sour cream and lime wedges on the side.
