Elevate your dinner with delicious and easy Mexican chicken wraps.
Ingredients:
  • 2 (about 400g) single chicken breast fillets
  • 1 x 125g can corn kernels, drained, rinsed
  • 1 x 400g can diced roma tomatoes, drained
  • 1 small fresh green chilli, deseeded, finely chopped
  • 40.00 ml coarsely chopped fresh coriander
  • 4 flour burrito wraps (Old El Paso brand)
  • 1/2 small ripe avocado, stone removed, peeled, mashed
  • 12 cos lettuce leaves, washed, dried, finely shredded
Instructions:
  • In a medium saucepan, simmer the chicken in hot water until tender and fully cooked, about 10-12 minutes. Remove from heat and transfer chicken to a paper towel-lined plate. Let it cool for 5 minutes, then shred roughly with a fork.
  • In a large bowl, mix together the corn, tomato, chili, and coriander.
  • 1. Preheat a medium non-stick frying pan over high heat until sizzling. Cook each burrito wrap for 1 minute on each side until beautifully golden brown. Place on a plate and tent with foil to maintain warmth. Repeat for the remaining wraps.
  • Spread the wraps generously with creamy avocado. Evenly distribute the savory chicken among the wraps before rolling them tightly to envelop the delicious filling. Finally, slice the wraps in half for perfect portions.
  • Arrange the lettuce on plates, then layer with chicken and avocado tortilla wraps. Serve with a side of corn salsa.
