Chicken fajitas

Make delicious super-food chicken fajitas loaded with lean protein and colorful veggies like peppers, eggplant, and avocado. A fun and interactive meal for everyone to enjoy!
Ingredients:
1 large aubergine
2limes
olive oil
1tablespoonred wine vinegar
1teaspoonchipotle Tabasco sauce
1teaspoondried oregano
2teaspoons sweet smoked paprika
2cloves of garlic
1 large red onion
2 x 200 g skinless free-range chicken breasts
3mixed-colour peppers
1bunch of fresh coriander (30g)
1ripe avocado
4 large seededwholemeal tortillas
50 g feta cheese
Instructions:
Combine oil, vinegar, chilli sauce, oregano, paprika, salt, pepper, and crushed garlic in a bowl. Add onion wedges and sliced chicken to the marinade. Refrigerate for at least 1 hour or overnight. Prick aubergine with a fork. Char peppers and aubergine until blistered. Peel and slice aubergine, dress with lime juice and coriander. Cook chicken and onions in a pan. Slice avocado and squeeze lime juice over. Warm tortillas. Serve with feta and coriander for everyone to assemble their own dish at the table.
