Chicken fajitas with guacamole

Ingredients:
  • 400 g free-range chicken breast strips
  • olive oil
  • 1 tablespoon sweet smoked paprika
  • 2 medium red onions
  • 1 red pepper
  • 1 yellow pepper
  • ½ a bunch of fresh coriander (15g)
  • 8 corn tortilla wraps
  • 1 large handful of mixed colour cherry tomatoes
  • 1 fresh red chilli
  • a few sprigs of coriander
  • 2 ripe avocados
  • 1-2 limes
  • chunky tomato salsa
  • fat-free natural yoghurt
Instructions:
  • Combine chicken strips with olive oil, paprika, sea salt, and black pepper in a bowl. Toss to coat and set aside. Slice onions, deseed and slice peppers, and pick coriander leaves. In a large frying pan over high heat, sauté onions and peppers with a splash of olive oil for about 5 minutes until slightly softened. Add chicken and cook for 5-10 minutes until golden and cooked through. For guacamole, roughly chop cherry tomatoes, deseed and chop chili, and chop coriander leaves. Mash together avocado, lime juice, tomatoes, chili, and coriander. Adjust seasoning with lime juice. Serve chicken, veggie mix, guacamole, tomato salsa, and yogurt with warm wraps for a DIY meal.
