Whip up these delicious chicken fajitas with zesty pineapple salsa in just 30 minutes!
Ingredients:
  • 500g Australian Chicken Thigh Fillets, thinly sliced
  • 1 red onion, thickly sliced
  • 2 red capsicums, seeded, thickly sliced
  • 485g pkt fajita kit
  • 1/2 pineapple, peeled, cored, cut into 1cm pieces
  • 62.50 ml coriander finely chopped
  • 12 butter lettuce leaves
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • In a large non-stick frying pan over high heat, heat the oil. Cook half of the chicken for 5 minutes, turning occasionally until browned and cooked through. Transfer to a plate and repeat with the remaining chicken.
  • Saute onions and bell peppers until tender. Add cooked chicken and fajita spice mix, cook until fragrant. Pour in fajita sauce and heat through.
  • Combine the sweet pineapple with fresh coriander in a bowl while you warm up the tortillas according to the package instructions.
  • Arrange the tortillas on serving plates, then layer them with lettuce, avocado, chicken mixture, and pineapple salsa. Finish with a sprinkle of pepper before serving.
