Flavorful chicken fajitas with marinated chicken, sautéed peppers, and onions in a sizzling cast iron skillet.
Ingredients:
  • 0.25 cup olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 0.5 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breasts
  • 1 large onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
Instructions:
  • Prepare the marinade by mixing olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Toss in the chicken until fully coated. Cover the bowl and refrigerate for at least 4 hours or overnight.
  • Preheat a cast iron skillet over medium-high heat. Add the chicken to the skillet, keeping the marinade aside. Cook on each side for 6 to 8 minutes until fully cooked. Check the doneness with a meat thermometer - it should read at least 165 degrees F (74 degrees C. Take the chicken out, slice, and set aside.
  • In the same skillet, heat olive oil and cook onion, bell peppers, and reserved marinade, stirring occasionally, until vegetables are soft and tender, for about 5 to 7 minutes.
  • Return the chicken to the skillet and cook while stirring until heated through, about 2 to 4 minutes.
