Simple and flavorful cast iron lemon chicken with minimal ingredients.
Ingredients:
  • 1 lemon, quartered
  • 4 skinless, boneless chicken breast halves
  • 0.25 teaspoon dried cilantro, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 0.25 teaspoon onion salt, or to taste
Instructions:
  • Prepare a large cast iron skillet by spraying it with cooking spray, then heat it gently over low heat.
  • Score each chicken breast with a fork, then sear them in a hot skillet. Squeeze a lemon wedge over each chicken breast, reserving some juice in each. Season with cilantro, onion salt, and pepper; cook until golden, approximately 7 minutes. Flip, score again, and repeat seasoning. Continue cooking until no longer pink and juices run clear, for an additional 5 to 7 minutes. Ensure chicken reaches a minimum internal temperature of 165°F (74°C) with a thermometer.
