Lemon Pepper Chicken Breasts

Whip up quick and flavorful lemon pepper chicken breasts for a delicious weeknight meal. Pair with rice or mashed potatoes for a satisfying dinner.
Ingredients:
  • 1 1/2 to 1 3/4 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)
  • 1 1/2 tablespoons lemon pepper seasoning, divided
  • 1/2 teaspoon kosher salt, plus more to taste
  • 3/4 cup all-purpose flour
  • 1 1/2 tablespoons vegetable oil
  • 4 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced or grated
  • 1/2 cup chicken stock
  • 1/3 cup freshly squeezed lemon juice (from 2 lemons)
  • 1/4 cup Italian parsley, chopped
  • Lemon slices, for garnish (optional)
Instructions:
  • Cut the chicken breast horizontally to create 2 cutlets by placing your hand flat on top of the breast to stabilize it and using a horizontal motion with your knife.
  • Mix 4 teaspoons of lemon pepper seasoning and salt in a small bowl. Season both sides of the chicken breasts with the spice mixture. Dredge the seasoned chicken in flour on both sides, tapping off any extra. Place chicken on a wire rack or platter before proceeding to heat the pan.
  • Pan-fry the chicken: Heat oil and 2 tablespoons of butter in a large skillet until shimmering. Add chicken cutlets in a single layer and fry for 3 minutes without moving. Flip and cook for an additional 2 1/2 to 3 minutes until cooked through. Transfer cooked chicken to a platter using tongs.
  • Prepare the lemon pepper sauce: Remove the darkened fat from the skillet and place it back on the stove. Add the remaining butter and melt over medium heat. Stir in garlic and sauté until fragrant, about 30-45 seconds. Pour in chicken stock and lemon juice to deglaze the pan, boiling until slightly thickened, approximately 1 minute. Season with 1/2 teaspoon of lemon pepper seasoning and salt to taste.
  • Coat the chicken: Add the chicken breasts back to the pan with the slightly reduced sauce. Ensure both sides are coated in the sauce.
