Spice-rubbed broiled chicken breasts, perfect with any veggies.
Ingredients:
  • 2.5 tablespoons extra-virgin olive oil, divided
  • 2 skinless, boneless chicken breast halves
  • 2 tablespoons paprika
  • 1 tablespoon lemon-pepper seasoning
  • 1 tablespoon kosher salt
  • 2 cloves garlic, smashed and finely chopped
  • 0.5 medium onion, chopped
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler. Grease a broiler pan with 1/2 tablespoon of olive oil.
  • After washing the chicken breasts and drying them gently, generously coat them with the leftover olive oil. Season both sides evenly with paprika, lemon-pepper, and salt. Arrange the chicken on the broiler pan, scatter garlic over the top, and place onions at the base and on top of the chicken for extra flavor.
  • Broil for 5 minutes until golden. Flip and cook until fully cooked and juices run clear, about 5-10 minutes. Ensure the internal temperature reaches 165 degrees F (74 degrees C) with an instant-read thermometer.
