Lemon-pepper seasoned baked chicken breasts coated in Parmesan bread crumbs for a tasty and simple family meal.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 3 tablespoons butter, melted
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup plain dry bread crumbs
  • 1 tablespoon dried parsley
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • On a flat surface, butterfly the chicken breasts by slicing horizontally through the thickest part, ensuring not to cut through completely. Open the halves like a book.
  • In a shallow dish, mix together butter, lemon juice, garlic, salt, and pepper.
  • Mix together the bread crumbs, Parmesan cheese, parsley, and basil in a separate bowl.
  • Coat chicken in butter mixture and then Parmesan-crumb mixture before placing in the baking pan.
  • Roast in the oven until the chicken breasts are fully cooked through, with clear juices, for 25 to 30 minutes or until an instant-read thermometer registers 165 degrees F (74 degrees C) when inserted into the center of a breast.
