Chicken and avocado tortilla cones

Ingredients:
  • 1 large (about 285g) skinless chicken breast
  • 76.80 gm (1/3 cup) ricotta
  • 2 spring onions, finely sliced
  • 40.00 ml finely chopped flat-leaf parsley
  • 4 tortillas, halved
  • Flesh of 1 avocado, sliced
  • 1 Lebanese cucumber, cut into batons
  • A handful of baby spinach
Instructions:
  • Preheat a chargrill to medium heat and grill the chicken breast for about 6 minutes per side, or until fully cooked.
  • Combine the creamy ricotta with fresh spring onions and parsley, and season generously with salt and pepper. Spread the flavorful ricotta mixture onto each tortilla half. Slice the succulent grilled chicken and distribute it among the tortilla halves along with slices of creamy avocado, crunchy cucumber, and vibrant spinach leaves. Roll each tortilla into an attractive cone shape, secure with string, and present elegantly. Enjoy the flavorful and visually appealing dish!
