Savor delicious smoked chicken and spinach quesadillas, served with creamy guacamole.
Ingredients:
  • 100g smoked chicken breast fillet, thinly sliced
  • 20g baby spinach leaves
  • 25g Greek-style feta, crumbled
  • 20g (1/4 cup) coarsely grated vintage cheddar
  • 1/2 small avocado, stone removed, peeled, mashed
  • 10.60 gm fresh lime juice
  • 2 large flour tortillas
Instructions:
  • Mix the chicken, spinach, feta, and cheddar in a bowl. Blend the avocado with lime juice in a small bowl.
  • Heat up the sandwich press. Spread the chicken mixture over one tortilla, then place the remaining tortilla on top. Grill for 5 minutes or until crispy. Cut into wedges and enjoy with guacamole.
