Texas Chicken Quesadillas

BBQ chicken quesadillas with caramelized onions, Cheddar and Monterey Jack, served with guacamole, sour cream, and chunky salsa.
Ingredients:
  • 2 tablespoons vegetable oil, divided
  • 1 onion, sliced into rings
  • 1 tablespoon honey
  • 2 skinless, boneless chicken breast halves - cut into strips
  • 0.5 cup barbeque sauce
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 8 (10 inch) flour tortillas
Instructions:
  • Preheat oven to 350°F (175°C) for a perfectly heated baking environment.
  • Heat 1 tablespoon of oil in a large, deep skillet over medium-high heat. Cook and stir onion until translucent. Add honey and stir until onion is golden brown, about 5 minutes. Transfer onion mixture from skillet and set aside.
  • Heat the rest of the oil in a skillet over medium-high heat, then add the chicken. Cook until the chicken is no longer pink, before stirring in the barbecue sauce to coat the chicken evenly.
  • Place a tortilla on a work surface and top with chicken, onions, Cheddar cheese, and Monterey Jack cheese. Repeat with remaining tortillas. Finish by placing another tortilla on top.
  • Place the layered tortillas on a large baking sheet and bake in the preheated oven until the cheese is melted, about 20 minutes. Make sure not to over-bake them. Once done, remove from the oven and cut into quarters before serving.
