Cheesy chicken and apple quesadillas with salsa on warm tortillas - a fun twist for kids!
Ingredients:
  • 4 Flour tortillas (approximately 8-inches wide)
  • 1 cup cooked, shredded or chopped, chicken meat
  • 1/4 lb cheddar or Monterey jack cheese, sliced or grated
  • 1 apple, sliced
  • 1/4 cup salsa
Instructions:
  • Puff up the tortilla: Heat a large skillet over medium-high heat. Cook the tortilla until it puffs up and develops air pockets, flipping as needed for even heating.
  • Sprinkle cheese and chicken on one side: Sprinkle cheese slices on half of the tortilla, leaving a 1/2-inch border. Layer chicken pieces over the cheese. Fold tortilla in half, press gently with spatula. Reduce heat to medium. Optionally, warm up a second tortilla in the skillet if space allows.
  • Once the cheese inside the quesadilla has melted, transfer it to a cutting board. Spread apple slices and salsa on top, then fold the tortilla. Cut into 3 triangles for easy serving.
  • Continue the process with the rest of the tortillas and Piper and her quesadilla.
