Savory apple chicken loaf glazed with tangy apple, Dijon mustard, and honey.
Ingredients:
  • 3 tablespoons butter
  • 2 stalks celery, finely chopped
  • 1 onion, chopped
  • 0.5 teaspoon salt
  • 1 carrot, grated
  • 1 apple - peeled, cored, and chopped
  • 1.5 pounds ground chicken
  • 0.33333334326744 cup applesauce
  • 2 tablespoons milk
  • 0.5 cup dry bread crumbs
  • 2 teaspoons poultry seasoning
  • 1 teaspoon ground sage
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a skillet over medium heat, melt butter and sauté celery and onion with 1/2 teaspoon of salt until onions are soft and browned, about 12 minutes. Add carrot and cook for an additional 5 minutes. Finally, mix in the apple and take the skillet off the heat.
  • Combine ground chicken, egg, 1/3 cup applesauce, milk, bread crumbs, poultry seasoning, sage, 1/2 teaspoon salt, black pepper, and cooked vegetable-apple mixture in a bowl. Shape into a loaf and transfer to a 9x12-inch baking dish.
  • Combine 1/3 cup of applesauce with Dijon mustard and honey in a bowl until smooth, then spread the glaze over the meatloaf.
  • Place the dough in the preheated oven and bake for 30 minutes. Then, lower the temperature to 375 degrees F (190 degrees C) and continue baking until the loaf's internal temperature reaches 180 degrees F (80 degrees C), for about 30 more minutes. Let the loaf rest for 5 minutes before serving.
