Golden brown pan-fried chicken breasts baked in a tangy apple and lemon sauce with green onions and mushrooms.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • ground black pepper to taste
  • 1.5 teaspoons butter
  • 0.5 cup sliced fresh mushrooms
  • 4 green onions, chopped
  • 1 clove garlic, finely minced
  • 0.33333334326744 cup unsweetened apple juice
Instructions:
  • Flatten the chicken breast halves until they are 1/2 inch thick, then cut them into large pieces.
  • In a plastic bag, combine flour, salt, and pepper. Add chicken pieces to the bag and shake gently until coated evenly with the flour mixture.
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and generously grease an 8x8 inch baking dish.
  • In a large skillet over medium heat, warm the olive oil and butter. Sear the coated chicken pieces on each side until they are golden brown, about 5 minutes for each side. Transfer the chicken to a baking dish, keeping the oil and butter in the skillet. Saute the mushrooms, green onions, and garlic in the skillet until the mushrooms release their juices and turn golden brown, for about 10 minutes. Spread the cooked vegetables over the chicken in the baking dish.
  • Combine apple juice, lemon juice, and sugar in a skillet, stirring until sugar is dissolved. Bring the mixture to a boil. Pour the flavorful sauce over the chicken and veggies in a baking dish, cover with foil, and bake in a preheated oven for about 1 hour, allowing the chicken to absorb the delicious sauce as it reduces.
