Spicy chicken burritos made with simmered whole chicken in tomato broth. Perfect for kids!
Ingredients:
  • 1 whole chicken
  • 1 (10 ounce) can diced tomatoes with habanero peppers (such as RO*TEL® Hot)
  • 1 green bell pepper, diced
  • 1 large onion, diced
  • 3 jalapeno chile peppers, seeded and diced
  • 2 (1 ounce) packets taco seasoning mix, divided
  • 2 tablespoons canola oil, or as needed
  • 1 (15 ounce) package flour tortillas
Instructions:
  • In a large pot, combine chicken, tomatoes with habanero peppers, green bell pepper, onion, jalapeno chile peppers, and 1 packet of taco seasoning. Add water until the chicken is just covered.
  • Simmer chicken and vegetables over low heat for 1 1/2 hours until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C) when checked with an instant-read thermometer.
  • After allowing the chicken to cool, shred the meat into bite-sized pieces and discard the bones. Remove half of the liquid from the pot while ensuring the vegetables remain. Return the shredded chicken to the pot and stir in the remaining taco seasoning packet. Simmer for about 10 minutes to blend flavors.
  • In a large skillet over medium heat, heat canola oil. Fry tortillas in batches until crispy, about 1 to 2 minutes per side. Fill each tortilla with chicken mixture to serve.
