Top fresh greens and air-fried chicken with Jillena's 5-star Yummy Honey Mustard Dressing for a mouthwatering main dish salad.
Ingredients:
  • 2 tablespoons olive oil
  • 1.5 cups panko bread crumbs
  • 0.25 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons water
  • 1.5 pounds skinless, boneless chicken breast halves
  • 8 cups mixed spring salad greens
  • 2 large carrots, peeled and sliced diagonally
  • 1 cup sliced radishes
  • 0.75 cup mayonnaise
  • 3 tablespoons prepared yellow mustard
  • 3 tablespoons honey
  • 4 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
Instructions:
  • In an extra-large skillet over medium heat, warm oil then add panko and garlic powder. Stir constantly until golden brown, for 2 to 3 minutes. Transfer to a shallow dish and let cool for another 2 to 3 minutes before mixing in the parsley.
  • Prepare the air fryer by spraying the basket with cooking spray and preheating it to 400°F (200°C).
  • In a separate shallow dish, combine flour, salt, and pepper. In another shallow dish, whisk together eggs and water.
  • Slice chicken breasts into long strips measuring 1x3 inches. Coat each strip in flour, then in beaten eggs, and finally in panko breadcrumbs for a crispy coating.
  • In batches, place the chicken in the preheated air fryer. Cook, flipping once, until the internal temperature reaches 165 degrees F (74 degrees C), about 5 to 7 minutes. Transfer to a plate, cover, and keep warm.
  • In a spacious bowl, mix salad greens, carrots, and radishes.
  • Combine mayonnaise, yellow mustard, honey, Dijon mustard, and lemon juice in a small bowl and mix until smooth and well blended.
  • Serve the mixed salad evenly on each plate, place the grilled chicken on top, and finish with a generous drizzle of dressing.
