Succulent grilled chicken, fresh apple, candied walnuts, and tangy blue cheese in raspberry vinaigrette elevate a bed of crisp salad greens.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 teaspoon seasoned salt
  • 4 cups salad greens
  • 1 Granny Smith apple, cored and sliced
  • 0.5 cup candied walnuts
  • 0.25 cup crumbled blue cheese
  • 0.25 cup raspberry vinaigrette, or to taste
Instructions:
  • Get your outdoor grill fired up to a sizzling medium-high heat and give the grate a light coating of oil.
  • Season the chicken generously with seasoned salt and grill for 5 to 7 minutes on each side until cooked through and the juices run clear. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C) when checked with an instant-read thermometer.
  • Combine salad greens, apple slices, walnuts, and blue cheese in a bowl. Coat with raspberry vinaigrette, toss well, and portion onto 2 plates.
  • Place a generous portion of chicken strips on each salad.
