Sweet stuffing inside juicy pork roll - simple and elegant!
Ingredients:
  • 5 tablespoons butter
  • 1 apple - peeled, cored, and chopped
  • 1 small onion, chopped
  • 1 celery stalk, diced
  • 1 cup unsweetened applesauce
  • 5 cups coarse dry breadcrumbs
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • Kosher salt and fresh ground pepper to taste
  • 1 (3 pound) boneless rolled pork loin roast
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • In a medium saucepan over medium heat, melt the butter. Add apple, onion, celery, and walnuts. Cook for 5 minutes until vegetables are tender. Stir in applesauce, water, and breadcrumbs. Cook until breadcrumbs absorb the liquid. Season with cinnamon, kosher salt, cloves, nutmeg, and ginger.
  • Lay out the pork roast flat in a baking dish. Season generously with salt and pepper. Spread the stuffing mixture over the roast, placing any extra around it. Roll the roast with the fatty side facing up, then secure with kitchen twine.
  • Bake it in a preheated oven for 45 to 50 minutes, or until the internal temperature reaches 145°F (63°C).
