Try these mouthwatering date and walnut stuffed baked apples for a warm and crispy dessert.
Ingredients:
  • 4 large Pink Lady apples
  • 4 fresh dates, pitted, chopped
  • 1/4 cup (25g) walnuts, toasted, chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Maple syrup or honey, to drizzle
  • 4 scoops Halo Top Sea Salt Caramel
  • Crushed biscuit, to serve
Instructions:
  • Begin by preheating your oven to 180°C. Prepare a rimmed baking tray with baking paper. Using a large sharp knife, cut the tops off the apples about 2cm from the stem ends, and set the tops aside. Carefully remove the apple cores using a small spoon, keeping the bottoms intact. Score a line around the center of each apple.
  • In a bowl, mix dates, walnuts, cinnamon, ginger, and 2 tablespoons of water. Stuff the mixture evenly into the apples, place them on a lined tray, and put their tops back on. Bake for 45 minutes, or until the apples are tender. Let them cool before serving.
  • Drizzle apples with decadent maple syrup or honey, then crown with a generous scoop of indulgent Halo Top ice cream. Finish with a delicate sprinkle of crumbled biscuit.
