Irresistible date and walnut loaf is sure to be a crowd-pleaser!
Ingredients:
  • 250.00 ml pitted dates, chopped
  • 250.00 gm boiling water
  • 54.00 gm maple syrup
  • 312.50 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 75.00 gm traditional rolled oats
  • 143.75 gm walnuts, chopped
  • 90.00 gm brown sugar
  • Light cream cheese, to serve
Instructions:
  • Preheat the oven to 180°C. Grease a 6.5cm-deep loaf pan measuring 9cm x 19cm at the base. Line the base and sides with baking paper, leaving a 2cm overhang on both long ends.
  • Place luscious dates in a heatproof bowl and drench them with a mixture of boiling water and rich maple syrup. Let them steep for 15 minutes to enhance their natural sweetness.
  • In a bowl, sift together flour and bicarbonate of soda. Mix in oats, walnuts, and sugar. Stir everything together, then add the date mixture and continue stirring until well combined.
  • Pour the mixture into the pan and level it. Bake for 50-55 minutes until a toothpick inserted in the middle comes out clean. Allow the loaf to cool in the pan for 5 minutes before transferring it to a wire rack. Slice and enjoy with cream cheese.
