Ingredients:
  • 4 large Pink Lady apples
  • 4 fresh dates, pitted, chopped
  • 25g walnut
  • 1.25 gm ground cinnamon
  • 0.63 gm ground ginger
  • Maple syrup or honey, to drizzle
  • 4 scoops Halo Top Sea Salt Caramel
  • Crushed biscuit, to serve
Instructions:
  • Preheat your oven to 180°C. Line a rimmed baking tray with baking paper. Slice off the tops of the apples about 2cm from the stem ends, and set them aside. Carefully core the apples, keeping the bottoms intact. Score a line around the center of each apple.
  • In a bowl, mix dates, walnuts, cinnamon, ginger, and 2 tablespoons of water. Stuff the apples evenly with the mixture. Arrange the apples on a baking sheet lined with parchment paper, replace the tops, and bake for 45 minutes, or until the apples are tender. Allow them to cool slightly before serving.
  • Drizzle apples with a sweet touch of maple syrup or honey, then add a generous scoop of Halo Top ice cream. Finish off with a sprinkle of crumbled biscuit on top.
