Irresistibly sweet loaf, best enjoyed warm with a maple syrup drizzle.
Ingredients:
  • 240g (1 1/2 cups) pitted dried dates, halved
  • 310mls (1 1/4 cups) water
  • 100g (1/2 cup, firmly packed) dark brown sugar
  • 80g butter, cubed
  • Melted butter, for greasing
  • 300g (2 cups) self-raising flour
  • 3.75 gm mixed spice
  • 2 eggs, lightly whisked
  • 1 x 100g pkt walnut pieces
Instructions:
  • In a medium saucepan, combine dates, water, brown sugar, and butter. Cook over medium heat until the sugar dissolves. Bring to a boil, then simmer uncovered for 2 minutes.
  • Transfer the mixture to a heat-resistant bowl and let it cool for 20 minutes.
  • Preheat the oven to 170°C and generously grease a 9.5cm x 19.5cm loaf pan with melted butter.
  • In a large mixing bowl, sift together the flour and mixed spice. Stir the eggs into the date mixture, then pour it into the flour mixture. Use a wooden spoon to mix everything together before adding and stirring in the walnuts.
  • Pour the mixture into the greased pan and bake in a preheated oven for 50-55 minutes until a skewer inserted into the center of the loaf comes out clean. Cool on a wire rack.
