Stuffed pork mignons with flavorful garlic herb butter - simple and delicious!
Ingredients:
  • 2 pkts Bruemar Pork Mignons with Garlic & Herb Butter
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 French shallot, finely chopped
  • 1 garlic clove, crushed
  • 1 green apple, peeled, finely chopped
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 30.00 gm water
  • 21.00 gm lemon juice
  • 350g green beans, trimmed
  • 45g (1/3 cup) walnuts
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare 2 baking trays with baking paper.
  • Preheat a large non-stick frying pan over medium heat. Lightly coat pork with olive oil cooking spray. Sear on all sides for 4 minutes or until golden brown. Transfer pork to a prepared baking tray and bake for 7-10 minutes until fully cooked. Rest covered with foil for 5 minutes before serving.
  • For the puree, warm 2 1/2 tablespoons of oil in a saucepan over medium-low heat. Add shallot and garlic, cook until tender for about 2 minutes. Add apple and cook until tender for about 3 minutes. Stir in cannellini beans, water, and lemon juice. Reduce heat to low and simmer covered, stirring occasionally, for 5 minutes until warmed through. Use a stick blender to blend until smooth.
  • Arrange green beans and walnuts on the baking tray. Drizzle with the remaining oil, season generously, and toss well to coat. Roast in the oven for 6-7 minutes, or until the beans are tender-crisp. Serve the pork with the puree and the green bean mixture.
