Enhance chicken with sweet apples in creamy mustard bake.
Ingredients:
  • 4 RSPCA Approved Chicken Marylands (or 1.4kg chicken pieces on the bone)
  • 2 bacon rashers, finely chopped
  • 1 brown onion, cut into wedges
  • 250ml apple cider
  • 23.40 gm Dijon mustard
  • 500ml chicken stock
  • 125ml thickened cream
  • 20.00 ml tarragon, coarsely chopped
  • 20g butter
  • 2 red apples, cored, cut into wedges
Instructions:
  • Preheat the oven to 180C. Sear chicken in a hot non-stick pan for 3 minutes on each side until golden brown, then transfer to a baking dish.
  • Place the bacon and onion into the pan and cook until onion softens, stirring occasionally. Stir in garlic until fragrant, then pour in apple cider or apple juice. Let it come to a boil and cook until the liquid reduces by half. Add mustard, stock, cream, and tarragon. Bring to a boil, then pour over the chicken and bake until the chicken is cooked through and the sauce slightly thickens, about 35 mins.
  • Melt butter in a hot frying pan. Add the apple slices and cook until caramelised, about 2-3 minutes, turning occasionally. Transfer to a bowl.
  • Toss in the apple slices to the chicken mixture. Bake for 5 minutes or until apples are just tender. Season with your favorite seasoning.
