Apple and prosciutto chicken

Elevate chicken with sweet apple and salty prosciutto for a sophisticated flavor twist.
Ingredients:
  • 4 (about 220g each) single chicken supremes
  • Salt & freshly ground black pepper
  • 4 thin slices prosciutto, cut in half crossways
  • 1 golden delicious apple, peeled, cored, halved, thinly sliced
  • 20.00 ml calvados liqueur
  • 75g (1/4 cup) creme fraiche
  • 40.40 gm thin cream
  • 11.80 gm wholegrain mustard
  • 1/2 bunch watercress, leaves picked, washed, dried
  • 1 radicchio, leaves separated, washed, dried
Instructions:
  • Make a small incision on the side of each chicken breast to form a pocket without cutting all the way through. Season generously with salt and pepper.
  • Lay 2 slices of prosciutto in each chicken pocket, followed by a quarter of apple slices. Secure with toothpicks to seal the filling inside.
  • In a large frying pan over medium heat, heat the oil. Add the chicken, skin-side down, and cook for 8 minutes until the skin is golden brown and crisp. Flip the chicken and cook for another 8 minutes until fully cooked. Transfer to a plate, cover loosely with foil, and let it rest for 5 minutes before serving.
  • Turn up the heat to high. Pour in the calvados into the frying pan and cook while shaking the pan for about 1 minute until the calvados reduces slightly. Stir in the creme fraiche, cream, and mustard, cooking and stirring for another minute until the sauce thickens slightly.
  • In a bowl, mix watercress and radicchio. Remove toothpicks from chicken. Arrange chicken, watercress, and radicchio on plates and drizzle with sauce before serving.
