Pork chops with prosciutto, apple and Stilton

Elevate pork chops with prosciutto, apple, and blue cheese wrapping.
Ingredients:
  • 12 slices quality prosciutto
  • 4 higher-welfare pork chops French trimmed and all fat removed
  • 1 small red apple cored and sliced
  • 75 g Stilton cheese crumbled
  • 4 large rosemary sprigs to skewer
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Lay out 3 slices of prosciutto to overlap. Repeat with remaining prosciutto to make 4 piles. Season pork chops with salt and pepper. Sear chops on both sides in a hot pan. Place a seared chop on each prosciutto pile. Divide sliced apple and Stilton between the piles on top of the pork. Wrap prosciutto around each pork, apple, and Stilton parcel. Secure with rosemary. Bake on a tray for 15 minutes at 200ºC/400ºF/gas 6. Serve with mashed potatoes, greens, and cooking juices.
