Pan-seared pork chops with tomatoes and tangy feta cheese, paired with garlic mashed potatoes and asparagus for a deliciously elegant dinner.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 large onion, halved and thinly sliced
  • 4 pork loin chops, 1 inch thick
  • salt to taste
  • black pepper to taste
  • 1 pinch garlic powder to taste
  • 0.5 pint red grape tomatoes, halved
  • 0.5 pint yellow grape tomatoes, halved
  • 3 cloves garlic, diced
  • 1 tablespoon dried basil
  • 2.5 teaspoons balsamic vinegar
  • 4 ounces feta cheese, crumbled
Instructions:
  • In a skillet over medium heat, warm 1 tablespoon of olive oil. Sauté the onion until golden brown, then transfer it to a plate and set aside.
  • 1. In a skillet, warm up 1/2 tablespoon of olive oil. 2. Season the pork chops with salt, pepper, and garlic powder, then cook in the skillet until they reach your preferred level of doneness. 3. Use an instant-read thermometer to ensure the center reaches 145 degrees F (63 degrees C). 4. Set aside and keep the pork chops warm.
  • In a skillet, heat the remaining olive oil, then add the cooked onion, tomatoes, garlic, and basil. Cook and stir until the tomatoes are tender, approximately 3 minutes. Stir in the balsamic vinegar, and season with salt and pepper.
  • To serve, layer the onion and tomato mixture on top of the chops and generously sprinkle with savory feta cheese.
