Spicy grilled pork chops topped with a refreshing salsa made of sweet nectarines, juicy tomatoes, onions, cilantro, chile pepper flakes, and zesty lime juice.
Ingredients:
  • 2 nectarines, pitted and diced
  • 1 ripe tomato, seeded and diced
  • 0.25 cup diced onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 0.25 teaspoon crushed red pepper flakes, or to taste
  • salt to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • 8 (4 ounce) boneless pork loin chops
Instructions:
  • Preheat your outdoor grill to medium-high heat, lightly oil the grate, and position it 4 inches away from the heat source.
  • Combine the flavorful nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl. Mix well, season with salt to your liking. Chill for 30 minutes to let the flavors meld perfectly.
  • Combine cumin, chili powder, salt, and pepper in a bowl. Brush pork chops with olive oil and evenly season both sides with the spice mixture.
  • Grill pork loin chops until they are golden and the juices run clear, about 4 minutes per side. Serve the chops on plates and generously top each with salsa.
