Elevate pork chops into a juicy and flavor-packed dinner.
Ingredients:
  • 1.5 quarts water
  • 5 tablespoons kosher salt
  • 2 tablespoons white sugar
  • 6 pork loin chops, 1/2 inch thick
  • 0.5 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, minced
  • 0.5 cup balsamic vinegar
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 Vidalia onions, each cut into 8 wedges
  • 2 pears, cored and each cut into 8 wedges
  • 1 teaspoon salt
Instructions:
  • Combine water, kosher salt, and sugar in a large bowl. Submerge pork chops in the brine for up to one hour. Discard the brine, then pat the pork chops dry with paper towels.
  • Combine olive oil, garlic, and rosemary in a shallow dish. Add pork chops and toss to coat. Cover and refrigerate for at least 1-2 hours to marinate.
  • In a small saucepan, simmer balsamic vinegar until reduced by half, about 10 minutes. Let the syrupy vinegar cool.
  • In a large skillet over medium-high or high heat, melt butter with olive oil. Add the onions and pears and sear them until golden, being mindful to maintain their shape. Reduce heat to low and cook for about 7 minutes until tender. Mix in the reduced vinegar and salt. This step can be done ahead of time and set aside before grilling.
  • Heat up the grill until it reaches a medium-high temperature.
  • Start by gently heating the pears on the cooler section of the grill in a skillet, while searing the pork chops over the hot part. Cook the pork chops for approximately 3 minutes on each side, or until they reach your preferred level of doneness. Transfer the pork chops to a serving plate, tent with aluminum foil, and allow them to rest for a few minutes. Just before serving, uncover the pork chops, ladle the pear onion sauce over the top, and enjoy your delicious meal.
