Grilled pork chops with a smoky paprika rub.
Ingredients:
  • 6 (5 ounce) boneless pork loin chops, cut 1-inch thick
  • avocado cooking oil spray
  • 1.5 tablespoons smoked paprika
  • 1.5 teaspoons kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon granulated garlic
  • 0.13 teaspoon cayenne pepper, or to taste
Instructions:
  • Mix together smoked paprika, salt, pepper, onion powder, garlic, and cayenne in a small bowl.
  • Pat dry the chops with a paper towel, then coat both sides evenly with the dry ingredient mixture, gently rubbing it in with your fingertips.
  • Lay the chops on a plate and seal with plastic wrap before chilling in the refrigerator for a minimum of 8 hours.
  • Take out the rubbed chops from the refrigerator and let them sit at room temperature for approximately 20 minutes.
  • Allow the chops to come to room temperature while you clean the outdoor gas grill grate and preheat it to medium heat.
  • Once the grill is hot and ready, gently coat the chops with a light mist of avocado oil spray.
  • Oil the grill grates, grill the chops for 3 minutes. Give them a 90-degree turn for a criss-cross pattern, grill for 3 more minutes. Flip the chops and grill until no longer pink inside, around 4 minutes. Use a thermometer to ensure they reach 145°F (63°C) in the center.
  • Transfer to a serving platter and let it rest for 5 minutes under a foil tent before serving warm.
