Enhance sweet potatoes with peaches, cinnamon, and smoked pork chops for a delicious flavor infusion.
Ingredients:
  • 1 large sweet potato, peeled and thinly sliced
  • Dash of salt
  • 2 tablespoons butter or margarine
  • 4 pork boneless smoked chops
  • 2 medium peaches or nectarines, peeled and sliced
  • Dash of ground cinnamon
  • 4 medium green onions, sliced (1/4 cup)
Instructions:
  • Prepare the grill for direct heat. Cut four large sheets of heavy-duty aluminum foil. Apply cooking spray on the foil. Arrange a portion of sweet potato slices on one side of each foil sheet. Season with salt. Cut butter into small pieces and scatter over the sweet potatoes. Add pork chops and peaches on top. Sprinkle with cinnamon.
  • Enclose pork mixture in foil, creating a tight seal with two 1/2-inch folds. Leave room for air circulation and expansion on the sides.
  • Grill the packets over medium heat, covered, for 20 to 22 minutes until the sweet potatoes and peaches are tender. Then, place the opened packets on plates, cut an X on the top of each, fold back the foil, and sprinkle with onions.
