Grilled Peach Pitcher Margaritas

Enhance cocktails with sweet, rich Grilled Peach Margaritas using caramelized fruit.
Ingredients:
  • 3 ripe peaches
  • 1 tablespoon of neutral, high-heat oil, like avocado or canola
  • 20 ounces Blanco Tequila
  • 10 ounces freshly squeezed lime juice from about 12-15 medium limes
  • 7 1/2 ounces orange liqueur
  • 5 ounces simple syrup
  • Salt or sugar for rimming glasses, optional
Instructions:
  • Preheat your grill by creating a two-zone fire for indirect heat cooking. For a gas grill, set one burner to high, close the lid, and wait for the thermometer to reach 325°F. For a charcoal grill, heat the coals and then move them all to one side of the grill using a high-heat spatula or tongs.
  • Prepare the peaches by washing them, cutting them in half, and removing the pits before discarding them.
  • Prepare and grill the peaches: Oil the grill grates with a paper towel and place the peaches on a hot grill over indirect heat. Grill until charred with grill marks and soft (about 15-20 minutes), flipping halfway through. Remove from the grill and let cool completely for about an hour. Serve when ready.
  • After cooling the peaches, mix Blanco tequila, lime juice, orange liqueur, and simple syrup in a large spouted mixing glass. Once the peaches are fully cooled, add and mash them with a wooden spoon or masher until small peach chunks form. Transfer the mixture to a serving pitcher.
  • Prepare your cocktail glasses: moisten the rim with a lime slice and dip it in salt or sugar. Fill the glass with ice and pour in the margarita.
