Flatbread Pizza with Grilled Peaches

Grilled peach flatbread pizza for two topped with ricotta, sausage, and fresh greens - a perfect summer delight.
Ingredients:
  • cooking spray
  • 8 ounces pizza dough, at room temperature
  • 2 (4 ounce) links Italian sausage, casings removed
  • 0.5 cup ricotta cheese
  • 2 cloves garlic, thinly sliced
  • kosher salt and ground black pepper to taste
  • 2 medium peaches, pitted and sliced into thin wedges
  • 1.5 cups arugula
  • 0.25 cup microgreens
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and give a quick spritz of cooking spray on a large baking sheet.
  • Gently shape pizza dough into an 8-inch long rectangle and transfer it onto the baking sheet.
  • Bake in the oven until the dough is mostly cooked through and starting to brown, for 10 to 14 minutes.
  • Meanwhile, get your outdoor grill nice and hot by preheating it to high heat and give the grate a light coating of oil.
  • Heat a medium skillet over medium-high heat. Cook the sausage, breaking it up with a spoon, until browned and crumbly, for about 10 minutes. Transfer to a paper towel-lined plate.
  • Once the sausage is cooking, lay the peach slices in a single layer on the preheated grill. Grill for 8 minutes, flipping halfway through. Set aside.
  • After grilling the peaches, take the dough out of the oven. Evenly spread ricotta cheese on top, sprinkle garlic slices, and season with salt and pepper. Finally, lay the cooked sausage on top.
  • Continue baking in the oven until the toppings are heated through and the crust is fully cooked, approximately 5 minutes.
  • Layer the flatbread with juicy grilled peaches, peppery arugula, and delicate microgreens.
