Grilled flatbread pesto pizzas transformed into saladizzas with fresh lettuce, juicy tomatoes, and savory grilled chicken.
Ingredients:
  • 4 (7 inch) soft round flatbreads
  • 1 tablespoon olive oil, or as needed
  • 0.25 cup spinach pesto
  • 4 ounces mozzarella cheese, shredded
  • 4 cups chopped romaine lettuce
  • 10 ounces grilled chicken breasts, sliced into bite-sized pieces
  • 2 Roma tomatoes, seeded and chopped
  • 4 teaspoons grated Parmesan cheese
Instructions:
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Brush olive oil on the flatbread rounds, then flip them over and generously spread 1 tablespoon of spinach pesto and 1/4 cup of mozzarella cheese on each round.
  • Preheat the grill and place the oiled flatbreads cheese-side down. Grill until the cheese is melted, around 2 to 3 minutes. Transfer the flatbreads to a heat-proof plate and add 1 cup romaine lettuce, 2 1/2 ounces grilled chicken, 1/4 of the tomatoes, and a sprinkle of Parmesan cheese onto each flatbread.
