Rustic Flatbread Pizza

Savory flatbread pizza with smoked bacon, cremini mushrooms, asparagus, and Asiago cheese on a crispy crust.
Ingredients:
  • 1 tablespoon olive oil
  • 6 crimini mushrooms, sliced
  • 3 cloves garlic, chopped
  • 1 pinch salt and ground black pepper, or to taste
  • 8 spears fresh asparagus, trimmed and cut into 2-inch pieces
  • 0.5 pound applewood-smoked bacon, cut into 2-inch pieces
  • 1 (12 inch) prepared flatbread pizza crust
  • 0.75 cup prepared marinara sauce
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Asiago cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Prepare the baking sheet by lining it with aluminum foil.
  • In a skillet over medium heat, warm up 1 tablespoon of olive oil. Add mushrooms and garlic, then season with salt and black pepper. Sauté until the mushrooms release and evaporate their juices, approximately 10 minutes. Set aside the flavorful mushroom mixture once done.
  • In a separate large skillet over medium-high heat, heat an additional tablespoon of olive oil until very hot. Add the asparagus and cook, stirring occasionally, until the pieces are well browned, almost but not quite burned in spots, about 8 minutes. Remove the asparagus from the skillet and set aside.
  • Continue cooking bacon over medium heat in the skillet until it becomes crisp, approximately 10 minutes, stirring frequently. Remove excess grease while cooking for extra crispy bacon pieces.
  • Transfer the crispy bacon pieces onto a paper towel-lined plate to absorb any excess grease.
  • Place the flatbread crust on the baking sheet and generously spread it with marinara sauce.
  • Evenly layer the mushrooms and garlic on top of the pizza.
  • Arrange the asparagus generously atop the pizza.
  • Lay out bacon slices evenly on top of the pizza.
  • Cover the pizza with a layer of mozzarella cheese and then top with Asiago cheese.
  • Bake in the preheated oven until the cheeses are melted and bubbly, for 12 to 15 minutes.
