Delicious grilled gyro flatbread made with pizza dough and all the classic gyro sandwich flavors.
Ingredients:
  • 1 lb pizza dough
  • 1/3 cup tzatziki sauce
  • 1/3 cup quesadilla cheese
  • 1/4 cup garlic & herb seasoned feta cheese
  • 2 ounces prepared gyro meat, chopped
  • 1 Roma tomato, sliced
  • 2 Tablespoons sliced black olives
  • Fresh dill, optional
Instructions:
  • Preheat your gas grill on High for 10 to 15 minutes to get it nice and hot. Shape the pizza dough and generously brush one side with olive oil.
  • Adjust the grill by lowering the flame on half of the burners to Low to establish zones of direct and indirect heat.
  • Place dough on the grill with the olive oil side down over direct heat. Close the grill and grill until the bottom is lightly cooked with char marks, 1 to 3 minutes.
  • Transfer the dough using tongs to the indirect heat without flipping it and grill for an additional 2 to 3 minutes. Then, place the dough on a baking sheet.
  • Cover the dough with a layer of flavorful tzatziki sauce, then top it with a blend of quesadilla cheese, crumbled feta cheese, savory gyro meat, fresh tomato slices, and briny black olives.
  • Place the pizza back on the grill away from direct heat and cook for 3 to 4 minutes until the cheese is melted. Sprinkle with fresh dill, slice into wedges, and enjoy!
