Grilled chicken gyro sandwiches with roasted veggies and tzatziki.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 8 bamboo skewers, or as needed
  • 0.25 cup lemon juice
  • 0.25 cup olive oil
  • 1 medium lemon, zested
  • 2 cloves garlic, minced, or more to taste
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1.5 cups Greek yogurt
  • 0.5 large cucumber - peeled, seeded, and chopped
  • 2 large cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon white vinegar
  • 0.5 teaspoon salt
  • 1 medium yellow onion, sliced
  • 1 medium orange bell pepper, diced
  • 2 tablespoons olive oil, or more to taste
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon garlic powder
  • 4 small (4 inch) pita bread rounds, split
  • 1 tablespoon Sriracha sauce, or to taste
Instructions:
  • Cut the chicken into large cubes and soak the bamboo skewers in water.
  • Combine freshly squeezed lemon juice, aromatic olive oil, zesty lemon zest, minced garlic, fragrant thyme, rosemary, oregano, a pinch of salt, and a crack of black pepper in a spacious glass or ceramic bowl. Add the chicken and mix well until evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 20 minutes.
  • Combine yogurt, cucumber, garlic, olive oil, dill, vinegar, and salt in a small bowl to create flavorful tzatziki sauce. Chill in the refrigerator while you cook the chicken and vegetables.
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C) and prepare two baking sheets by lining them with foil.
  • Combine onion, bell pepper, olive oil, salt, black pepper, and garlic powder in a large bowl, then transfer onto one of the prepared baking sheets.
  • Take the chicken out of the marinade, allowing any extra marinade to drip off. Thread the chicken onto skewers and place them on the baking sheet. Dispose of any leftover marinade.
  • - Slide the chicken onto the middle rack of the preheated oven and the veggies on the bottom rack. Bake for 15 minutes. Take out the veggies. Switch on the broiler and broil the chicken until nicely browned, around 2 minutes, ensuring the internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer.
  • Take the chicken out of the oven and slide it off the skewers. Fill the pitas with the chicken, cooked veggies, tzatziki, and Sriracha.
