Chicken Gyro Pizza

45-minute Mediterranean dinner: Cheesy chicken and veggie pizza with Bisquick Heart Smart™ mix.
Ingredients:
  • 2 cups Bisquick Heart Smart™ mix
  • 1/4 teaspoon dried oregano leaves
  • 1/2 cup cold water
  • 2 cooked chicken breasts, cut into strips (about 3/4 lb)
  • 1 can (2 1/4 oz) sliced ripe olives, drained
  • 1/4 cup crumbled reduced-fat feta cheese (1 1/2 oz)
  • 1 cup shredded reduced-fat mozzarella cheese (4 oz)
  • 1 small tomato, chopped (1/2 cup)
  • 1/2 cup chopped cucumber
Instructions:
  • Preheat oven to 425°F and position the rack on the lowest level. Grease a 12-inch pizza pan with cooking spray. In a bowl, mix Bisquick, oregano, and water vigorously for 20 strokes until a soft dough forms. Press the dough into the pizza pan using Bisquick-dusted fingers, creating a 1/2-inch rim around the edge. Bake until golden brown, about 15 minutes.
  • Layer chicken and olives on top of the crust, then generously sprinkle with a blend of feta and mozzarella cheeses.
  • Bake for around 10 minutes until the cheese is gooey. Top with fresh tomato and cucumber.
