Pork tacos with grilled peach salsa

30-minute pork tacos paired with sweet grilled peach salsa for a delicious twist.
Ingredients:
  • 7.50 gm ground cumin
  • 1 tsp hot chilli powder
  • 18.20 gm olive oil
  • 2 garlic cloves, crushed
  • 500g pork medallions, thinly sliced
  • 2 peaches, cut into wedges
  • 8 mini tortillas
  • 250.00 ml fresh coriander leaves
  • 1/2 small red onion, finely chopped
  • 1 long red chilli, seeded, cut into long thin strips
  • Plain yoghurt, to serve
  • Lime wedges, to serve
Instructions:
  • In a bowl, mix together cumin, chili powder, oil, and garlic. Add the pork, season with salt and pepper, and toss to coat. Let it sit for 10 minutes to marinate.
  • Heat a chargrill pan or barbecue grill over medium-high heat. Grill peaches for 2 minutes on each side until charred. Let them cool for 2 minutes, then slice into 1cm pieces.
  • Place the pork on the chargrill and cook for 2 minutes on each side until nicely browned and just cooked through. Then, transfer the pork to a bowl. In the same pan, cook the tortillas in batches over high heat for 20 seconds on each side until they are heated through and starting to blister and blacken. Finally, mix together the peach, coriander, onion, and chilli in a bowl. Fill the tortillas with pork and the salsa mixture, and serve with yogurt and lime wedges.
