Spicy pork tacos with jalapenos, sour cream, and lime ready in just 30 minutes!
Ingredients:
  • 1 small red onion, finely chopped
  • 500g pork sausages, casings removed
  • 30g pkt Taco Spice Mix
  • 375g jar Mild Thick & Chunky Salsa
  • 1 lime, juiced
  • 208g pkt Mexicana Street Market White Corn Tortillas
  • 60g lettuce
  • 1/2 Granny Smith apple, cut into matchsticks
  • 1/2 avocado, stoned, peeled, thinly sliced
  • 125.00 ml coriander leaves
  • 40.00 ml drained Jalapeños, halved
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • In a frying pan over medium heat, sauté onions in oil until softened, about 3 minutes. Add sausages to the pan and cook, breaking them up with a wooden spoon, until browned and cooked through, about 5 minutes.
  • Cook the spice mix until fragrant by stirring for 2 minutes. Combine half of the salsa with 1/2 cup (125ml) water and simmer until the mixture thickens, about 5 minutes. Finish by stirring in the lime juice.
  • Heat the tortillas according to the instructions on the packet.
  • Toss together the lettuce, apple, avocado, and coriander in a bowl. Separate the mixture into tortillas. Add sausage mixture, jalapeños, sour cream, and remaining salsa on top. Serve with lime wedges.
