Festive fiesta tacos

Delicious pork tacos with a perfect balance of flavors and textures: spicy, crispy, and refreshing with a hint of citrus.
Ingredients:
  • 1 teaspoon sweet smoked paprika
  • 1 teaspoon fennel seeds
  • 200 g higher-welfare pork belly skin off and cut into 1cm dice
  • 1 ripe avocado halved and destoned
  • 2 large ripe tomatoes
  • 1 fresh red chilli
  • 200 g tinned haricot beans drained, optional
  • 2 limes
  • sea salt
  • freshly ground black pepper
  • 1 teaspoon runny honey
  • 6 taco shells
  • ½ bunch fresh coriander leaves picked and chopped
  • 1 lime
  • fat-free natural yoghurt to serve
Instructions:
  • Prepare the board with sweet smoked paprika and fennel seeds, then mix with diced pork belly. Wash your hands thoroughly. Place a large pan over medium heat, add a splash of oil, and fry the spiced pork for 5 minutes until crispy and golden, shaking the pan occasionally. Clean your knife while the pork cooks. Scoop the avocado flesh, chop into chunks along with tomatoes, and finely chop the chili to make salsa. Drain and add haricot beans to the pork, cook for 2-4 minutes until thick. Squeeze lime juice over the salsa, season, and mix. Add honey to the pork for shine, then season and mix. Arrange taco shells on a serving board, divide meat among them. Stir coriander into salsa, top each taco with it, a dollop of yogurt, lime juice, and enjoy.
