Fiesta Enchilada Bake

Make mealtimes more festive with an Old El Paso® taco dinner kit!
Ingredients:
  • 1 1/4 lb lean ground turkey
  • 1 package (8.8 oz) Old El Paso™ Crunchy Taco Dinner Kit
  • 2/3 cup water
  • 2 cans (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1/2 cup sliced green onions (8 medium)
  • 2 cups shredded Cheddar cheese (8 oz)
  • 3 cups shredded lettuce
  • 1/2 cup sour cream
Instructions:
  • Preheat oven to 325°F. Grease a 13x9-inch (3-quart) glass baking dish. In a 2-quart saucepan, brown ground turkey over medium-high heat for 4 to 6 minutes until cooked; drain any excess fat. Add the seasoning mix from the dinner kit and water. Follow package instructions to cook.
  • Begin by gently pouring a can of flavorful enchilada sauce into a baking dish. Take the taco shells from the kit and break them in half. Lay half of the shells neatly over the sauce, ensuring they overlap if needed. Next, add turkey, onions, and a generous cup of cheese on top. Follow this by adding the remaining taco shells over the cheese. Lastly, pour the remaining can of zesty enchilada sauce over the shells, ensuring they are well coated for a dish full of bold flavors.
  • Cover dish with foil and bake for 30 minutes until hot and bubbly. Remove foil, sprinkle remaining 1 cup cheese over top, and bake uncovered for an additional 15 minutes until cheese is melted. Serve by topping individual servings with lettuce, sour cream, and taco sauce from the kit.
